Before this point, consumers, restaurateurs, and grocers often held close and direct relationships with local farmers. Over time, however, the food supply chain became larger and more complex, and as a result, <a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/full\/10.1002\/agr.21829\">these relationships were largely lost<\/a>.<\/p><p>To restore this connection and re-introduce fresh, local, and organic produce in modern diets, sustainable farming advocate and chef, Alice Waters, opened the first Farm to Table restaurant, Chez Panisse, <a href=\"https:\/\/www.bbc.com\/travel\/article\/20230214-alice-waters-food-revolutionary\">in Berkeley, California in 1971<\/a>.<\/p><p>This inspired other chefs in California, and the concept eventually gained popularity across North America.
